New Year! New Order!

Happy New Year!

To start 2021 on the right note, Brian maintained his New Year’s Day tradition of hopping on a motorcycle—a tradition I don’t share since I’m a wimp when it comes to riding in the cold. This year, his ride included an emergency Danzeisen Cream delivery (emergency because really… no other cream will do.) He delivered the pints on our ultimate milk delivery machine: (no, not his creepy van) the Harley-Davidson Moo Glide, so named for the cowhide inserts and Holstein-like coloring.

While Brian rode, I put one of our new products to the test:

Beeler’s Back Ribs

When I talked to Julie Beeler a couple of weeks ago, she mentioned their 1/2 Rack Back Ribs, so we ordered some. Like all Beeler’s products, they are hormone and antibiotic-free, plus they are delicious. If you aren’t familiar with Beeler’s, the family-owned company has been around for 150 years and maintains exceptionally high standards. If you’ve had the bacon or tenderloins we carry, you know. This from their website:

“Beeler’s is proud to raise Heritage Duroc pork – but not just your average Duroc. We have worked hard to refine our Duroc-sired genetics to achieve superior marbling for an unforgettable dining experience. For that juicy bite and vibrant pink color, we focus on achieving the perfect pH. In fact, our natural pork flavor is so tasty, you’ll notice minimal ingredients added to our products. It’s just that good!”

You don’t have to wait for summer grilling season. These ribs worked beautifully in the oven. We seasoned them with salt and Flatiron Pepper Flakes and oven-roasted for 2 1/2 hours at 275 degrees. Sweat Heat or Dark and Smoky work great with pork.

The Ribs came out fall-off-the-bone tender and so delicious. Keep in mind, these are small packages, about a pound. The pack we made had five ribs, but they had plenty of meat and satisfied the two of us (along with a hearty salad) for lunch. For dinner, one 1/2 rack per adult might be a better serving size.

Bolita Beans

Adobe Milling Company’s Bolita Beans pair perfectly with these flavorful ribs. Bolitas are a mild, pale-colored bean that pick up flavors beautifully. We like adding sautéed poblanos and black pepper. Never made dried beans? Here’s how Brian makes them!

Working on Restock!

The Christmas rush stripped our shelves, but we are working hard to get restocked! Stay tuned!
We did get a fresh shipment of Joshua Tree Coffee! If you don’t have a grinder, no problem. We can grind for you.
